Hello smartcoyote, thank you for your inquiry. We generally try to make all our doughs (cake, puff and pizza dough) without palm oil. This doesn't work for the organic varieties, as we are not allowed to use rapeseed oil in accordance with the current organic guidelines. As far as ethanol is concerned, we spray a very small amount of it on the dough for preservation purposes. However, it evaporates during baking so that there is no alcohol left in the finished product. Out of curiosity, why is rapeseed oil taboo for organic products?
Hello Bodenseeknusperli, thank you for your question - I was happy to clarify. According to organic guidelines, we are not allowed to use hydrogenated fats. When we switched to palm oil-free, we used hardened rapeseed oil, but this is not possible under organic standards due to the hardening process. Kind regards, Richi
