For lunch, I often buy one of the many Anna's Best ready-made salads, which are available in different varieties and sizes. I have noticed that many of the salads contain animal products, even though this would not be necessary or the main ingredient would be vegan, e.g. egg yolk powder, yoghurt, quark etc.. I am sure that plant-based alternatives could be found here (soy yoghurt or binding agents such as xanthan gum, locust bean gum etc.) without changing the taste of the end result. At the moment, the selection of snacks and ready meals without animal products in smaller markets is quite modest (I always shop in a supermarket).
