Cooked according to an old family recipe, it loses little volume, remains tender and flavorful.
If it had been labeled "shoulder roast," I would have given it 5 stars. Shoulder meat is rich in connective tissue and collagen, making it suitable for slow cooking. The approx. 1.2 kg roast was a delight after approx. 3 hours at 160°C, tender and with a fantastic-tasting sauce.
Tender, lean, fine
This was a really good piece for my ragout. The meat melted in my mouth.
a good shoulder roast, braised for a long time, always a treat
Rarely have you braised such a sinewy and inedible roast 👎🏻
1 kg cooked down with meat probe. Perfectly cooked, but the meat was tough and a lot of the fat inside had to be cut away when it was eaten as it was inedible. The piece of meat was packaged in a plastic bag, with no indication of which piece of meat it was, just roast beef. Only on the receipt could I see that it was from the neck. I won't be buying this again!
Always fine
