As an Italian, I simply love this mozzarella!
According to a balance 2025 test, this mozzarella has an extreme value of 4,700,000 yeast fungi and 17,000,000 pseudonomads when it reaches the expiry date
When reaching the expiration date at a storage temperature of 4°C
The next worst product then only reaches
2'000'000 yeast fungi and <10 pseudonomads
while all other mozzarellas contain only 10 or less.
I don't know what that means.
I don't know whether this is an exception.
On the one hand, Galbani Pizza Mozarella is highly praised, on the other hand we have this result here.
