The consistency is nice and soft and not at all rubbery. The pieces are relatively fine and could be a little coarser for me. Despite the label "asian style", the seitan doesn't really taste Asian and can therefore be used for any dish and can be individualized. I am also impressed by the short list of ingredients and top nutritional values.
