what exactly are "fermentation cultures"? WHICH? there are dozens of them, and for intolerant/allergy sufferers and everyone else, an exact description would be important. i wouldn't be surprised if the people who got sick reacted to them.
fungi, yeast, bacteria etc. are not just any ingredients, they are/were living organisms that can do a lot of things to people. if you use something like that, you need to inform your customers exactly.

Pure cultures are used for the nuggets, which are also used as starter cultures for tempeh worldwide. These are GMO-free, vegan and allergen-free. The product is heated and pasteurized during production, so the cultures are inactive. We are not aware of any intolerance to date. Unfortunately, we are unable to provide any further details.
