Is there a cooked version without vinegar?
Hello carlos1977, thank you for your request. We don't use vinegar for sauerkraut. However, during fermentation, acetic acid is produced as well as lactic acid. The ratio of lactic acid to acetic acid varies between 4:1 and 6:1. There are lactic acid bacteria (Lactobacillus Plantarum) that only produce lactic acid. Other lactic acid bacteria (Leuconostoc) also produce C02, aromas and acetic acid in addition to lactic acid. If sauerkraut is made with cultures of lactobacilli, the result tends to be a "sour, less aromatic" product that contains almost only lactic acid. If you make sauerkraut without cultures, or with the Leuconostoc culture, the result is more of a "harmonious, milder" product in terms of flavor, but it also contains some acetic acid.
